This week we will be continuing with our theme of tasty baked goods that would pair well with a nice cup of hot or chilled tea. This time, however, things are going to get a little sweeter as we will be showing you how to make delicious lavender cookies.
1/4 cup shortening
1/4 cup butter, softened
5/8 cup sugar
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1-1/8 cups all-purpose flour
2 teaspoons dried lavender flowers
1/2 teaspoon baking powder
1/4 teaspoon salt
Preheat oven to 190°C. While waiting for oven, cream shortening, sugar and butter until light and fluffy. Then, add eggs one at a time, beating well after each, followed by beating in extracts. Elsewhere, combine flour, lavender, baking powder and salt. Gradually add this combination to creamed mixture and mix well.
Next, add cookie mixture in rounded teaspoons roughly 2 inches apart onto baking sheets lightly coated with cooking spray. Cook for 8-10 minutes or until golden brown. Cool for 2 minutes on cooking sheet before removing to wire racks. Store in a sealed container. Yields between 3 and 4 dozen.
