Give some new life to an old favourite. A fresh, fruity muffin with a vibrant taste, serve warm with softened butter and enjoy!
For one dozen muffins:
cooking spray
3/4 cupwhole-wheat flour
1 cupwhite sugar
2 teaspoonsbaking powder
1 1/2 teaspoonslavender flowers
1/4 teaspoonsalt
2ripe bananas, mashed
1/2 cup1% milk
1/4 cup vegetable oil
1egg, beaten
1 cupfresh blueberries
Preheat oven to 400 degrees F (200 degrees C). Spray a 12-cup muffin tin with cooking spray.
Combine all-purpose flour, whole-wheat flour, sugar, baking powder, lavender, and salt together in a bowl. Mix bananas, milk, vegetable oil, and egg together in a separate bowl. Add banana mixture to flour mixture; stir until just combined. Fold in blueberries. Spoon batter into prepared muffin tin.
Bake in the preheated oven until golden and a toothpick inserted in the centre comes out clean, about 20 minutes. Cool muffins in tin for 5 minutes before transferring to a wire rack.
