Homemade Blueberry Lavender Honey Butter: A delectable topping to muffins, sweetbreads and pastries. Or use as a holiday dinner appetizer on top of a crostini topped with warm brie cheese!
Ingredients for 1 lb:
- 1 quart cold, heavy cream
- 1/4 cup blueberries
- 1 tablespoon chopped, dried lavender buds
- 1 tablespoon honey
- 1/8 tablespoon sea salt
Instructions: Place heavy cream in the bowl of a stand mixer, fitted with whisk attachment. Whisk on medium- high for about 15 minutes. you should see soft peaks, then whipped cream then after about 10- 13 minutes it should start to break down, turn yellow and separate from the liquid (buttermilk). The butter will be ready when there is a substantial amount of buttermilk in the bowl and the butter pieces have started to come together, Drain the contents of the bowl into a colander . Press the butter into the colander to get rid of any excess buttermilk. Form the butter into a ball with your hands and rinse off with cold water. Put butter into the bowl and add all other ingredients and mash together with a fork until well incorporated. Roll butter into a ball and wrap in plastic wrap to store.
